What does eggplant taste like?
For some reason, I have no interest in tasting eggplant, but I'm curious to what flavor and texture it has when cooked.
My guy likes it but can't seem to explain it to me.
Would appreciate your input.

JubJub, it picks up the flavors of whatever your cooking with it, Like in an eggplant parmigiana, I find it picks up some of the onion and garlic flavor.

It tastes like eggplant. It all depends on how you prepare it. Did you ever try Baba Ganoush at a Mediterranean restaurant? That's made of eggplant.
If you just grill it, I guess grilled pumpkin gets close to it, but without the sweetness.
