Where do I start with a Ring and Valve job?

So, I wanted to restore a 1974 Kawasaki F11. So I got the electrical to work and the motorcycle fires. Out the exhaust is all this black smoke. I was told it might need a ring and valve job, or or piston grinding.

Well I let it run and the black smoke lessened the longer it ran but it shouldn't have black smoke. I was wondering where do I want to start with this job? Honestly I'm not sure how much would it take to take it in and/or if anyone would still service it.

Where do I want to start?

    black smoke is too much fuel. if it was rings or valves, the smoke would be a bluish from the oil. if the thing sat for a while rings and valve stem seals would do that but since you say black, i think that your issue is carb related and not oil.
