"check" has three rules
1) block check
2) remove attacking piece
3) move king
the king CAN capture the attacking piece (if its unprotected)

If the question is... When can a king that is in check capture a piece?
As long as it is a legal move and capturing the piece doesn't move him into check.
If the question is... When can a king caputer a piece that will leave him in check?
He can't.
