i am looking for a chocolate icing that pipes well. would a ganache work?
This is for piping only and will not be the main icing. It will be the border on a sponge cake

you want to pipe it like to write on a cake or pipe decorations?? a whipped ganache can easily be piped I do it all the time and if im in a rush and lazy ill even write on cakes with liquid ganache
Ganache needs to be at cool room temp to whip then you have to pipe quickly as it hardens and youll have to start over by melting and re whipping

It should pipe well.
You could do it one of two ways.
1, allow the ganache to thicken and put it into your piping bag. This will work well if you are doing something simple, lines or large dots.
2, allow the ganache to cool then whip until it is fluffy. Then pipe use a star tip or one for scallops.
The ganache, once it has cooled will whip up fairly fluffy so piping should be pretty easy.
When you whip it the ganache should stay fairly soft if you use the ganache with out whipping it may get pretty firm if the cake is refrigerated.

I think a ganache is too soft. it's like a glaze frosting for the surface of a cake, not for piping.
Butter cream is still the best for piping and decorating by using different decorating tips for flowers and writing tips for names etc.

ones wiht butter sugar and egg whites are good and bitter or semisweet chocolatre
