What can you do with sour milk?

I hate to waste food and I am often annoyed when the milk turns. I don't mind it as much when it's just turning as it tastes great in tea, but when it has gone off fully I feel there is little I can do with it.

So I was wondering, instead of just pouring that last half pint of sour milk down the sink, does it have a use? Is there any good recipes that include stale milk?

  • I'm not sure how popular that Yank institution of Macaroni and Cheese is in the UK, but sour milk works perfectly in it, as the cooking kills the culture.

    You're on your way to your own yoghurt. Just place a teaspoon of existing yoghurt in your milk and it will become yoghurt, not that I could ever imagine how anyone could choke it down.......lol-yoghurt is vile.

    My experience has been that using soured milk in recipes that call for milk and are to be cooked/baked, that there is little difference. We've even pulled it off in chocolate cake.

    However, some of us are mad as hatters, as is well known.

    SOUR-MILK GRIDDLE-CAKES

    1 cup thick sour milk.

    1/2 cup any cooked grain cereal.

    1 egg.

    About 3/4 cup flour.

    1/2 teaspoon soda.

    1/8 teaspoon salt.

    Beat sour milk, cereal, and egg well together. Sift flour and salt and add them. When ready to bake the cakes add the soda and beat the batter vigorously. It should look like thick cream. If too thin add a little more flour, and if too thick add more sour milk or a little water.

    COTTAGE CHEESE NO1

    Cook one pint of thick sour milk in double boiler over simmering water until it begins to whey. Strain through fine napkin, squeeze out the whey, and add three teaspoons of cream, a little salt, and white pepper. Make into small balls. This amount makes four or five.

    COTTAGE CHEESE NO. 2

    To three pints of thick sour milk add one pint of boiling or very hot water. Let stand half an hour, pour off water, and put curd in small bag to drain. Add salt, a little soft butter, and cream if at hand.

    The fact that the milk has 'gone off' means that it decomposing and there is alot of bacteria making it unfit for consumption. Throw away that last half pint and save yourself from food poisoning.

    yoghurt! add it to a little yoghurt you already have, put it in a warm place- not hot (over a radiator for example) overnight and sweeten it with honey if you don't want a completely tart yoghurt. Add it to pancake batters and serve it with berries and maple syrup...make 'sourmilk' scones, instead of buttermilk scones too!

    basically pour it down the drain. bitter milk is unquestionably organic and organic and not risky to the ambience. in case you incredibly have been given choosy, then completely permit it curdle, then bypass away it outdoors for bugs and microscopic organisms to digest. it's going to be stinky and unsightful, regardless of the undeniable fact that.

    You can use it to bake scones. That's what I use it for.
