espresso - how much coffee?

I bought a used Gaggia Careeza espresso machine. The measuring spoon is missing. How much coffee do I put in to make a single shot of espresso? What is the milk to espresso ratio for latte or cappuccino?

    In the basket, you want the grinds to be level with the top. Then, tamp down. It should be around 5mm away from the top of the basket now. When extracting, make sure you get 30mL in 25 seconds (+/- 3 seconds). If it's too fast, increase resistance by using a finer grind, tamping harder or using more coffee. If it's pouring too slow, use a coarser grind, soften tamping or less coffee. Experiment until you get a combination that works =)

    For a standard latte, 30mL espresso in a glass topped with milk and about 1cm flat foam. With a cap, serve in a mug and have 30mL espresso, topped with milk and a thick dome of froth, sprinkled with chocolate powder.
