Ubuntu 10.04 LTS is without doubt the most stable as it benefits from Long Term Support. Linux Mint 9 LTS which is based on Ubuntu 10.04 LTS is nothing short of outstanding since the last release update which had Kernel 2.6.38 ported

Ubuntu 10.10 is stable but does not benefit from Long Term Support and runs off Kernel 2.6.35 and does not look as though it will recieve the upgrade to Kernel 2.6.38. Linux Mint 10 which is based on Ubuntu 10.10 will most likely lose out in the long run because of this

Ubuntu 11.04 is unstable as it uses the controversial Unity Desktop although it does run off Kernel 2.6.38. On the other hand Linux Mint 11 which is based on Ubuntu 11.04 and features the GNOME Desktop instead of Unity is excellent

I thoroughly recommend Linux Mint 11. Its easy to install and easy to use plus it comes with much of the software you are likely to need preinstalled.

You download the ISO. image of Linux Mint 11 then you need to create a Bootable LiveDVD for installation

10.04 (Lucid Lynx) is the LTS version (means will be supported until April 2013).
Latest version of Ubuntu is 11.04 (Natty Narhwal), soon 11.10 Ocelot will be released in october 2011.
All to these are stable versions. If you tend to upgrade and use the latest techs, go for Natty. If you want to stick with robustness and support, go for Lucid.
