in beauty and the beast, why did the enchantress put a spell on everything besides just the prince?

    Because Disney has historically had an obsessive need to include "cute" characters in their movies, so what were once enchanted but still inanimate objects (the candelabra, for instance) became talking, singing former human beings.

    By the way, if you haven't seen the 1946 French film La Belle et la Bette (directed by Jean Cocteau), I highly recommend it.

    She wanted the prince to remember every seccond of every day - if she turned just the prince into a beast then he could have just states away from reflective objects... plus, you wouldn't have had "Be our Guest" and "When we're Human Again"

    Its just part of the curse but in the original story (not the disney version) the servants are invisable.
