What cheese to add to this recipe?

Going to a potluck tonight found a recipe for a Black bean Asparagus salad. I want to either add some feta crumbles or Parmesan shaving. The ingredients are black beans, asparagus, red bell pepper onion, parsley lime juice olive oil salt & pepper. Which cheese would work better? Any other suggestions are appreciated as well. Thanks in advance.

I would go with soft goats cheese in chunks and a shaving of parmesan but be sure to use fresh grated parmesan not some pre-prepared out of a carton stuff. Its just not the same!

I know parmesan seems expensive but when you buy it it lasts for ages. I just finished the block I bought just before Valentines day.

If you like recipes with asparagus in them why not take a look at www.asparagus-lover.com for some recipes.

Use both, the flavors will complement well with the vegetables you're using. You get the saltiness and texture of the feta and the savoriness of the Parmesan.

sounding somewhat of a latin american salad with black beans, peppers and lime juice, i would recommend the hispanic equivalent of feta, called queso fresco. not only does it have similar texture to feta (nice and crumbly) but its also usually cheaper
