One day before. Look at it like this:

DAY 8 - 1/1 of it is covered

Because it doubles every day, it has to be half of 1/1 on the seventh day

DAY 7 - 1/2 of it is covered

And so on and so forth

    DAY 6 1/4

    DAY 5 1/8

    DAY 4 1/16

    DAY 3 1/32

    DAY 2 1/64

    DAY 1 1/128

If the mould takes a day to double its coverage of the surface of the bread, and by the end of day 8 the entire surface was covered (the whole being 'double' half) we know it only took a day to go from half covered to entirely covered) so it must have been the day before the 8th day that the bread was half covered- the end of day 7.
