Oh yumm. If they are still firm enough, slice bananas in half longways. Butter a baking dish with plenty of butter. Put the banana slices in it in a single layer. Sprinkle coconut flakes on top to cover, then sprinkle with brown sugar. Bake that sucker @ 375 for about 20 minutes till the coconut turns brown or just run it under the broiler for about 5 minutes. This is GREAT to slosh all over your hot cereal or on a cake or just eat it with a spoon.

Mash, add brown sugar, melted butter, and a little rum to taste, mix well and cover or fill a cake. You might prefer to simmer the sauce on the stove or brown the cake under a broiler before serving. Sauce is also good on ice cream, crepes, and as a filling for desert chimichangas.

I peel the bananas, cut them up into medallians, stick them in a plastic bag, suck out all of the air, then stick them in the freezer. Once frozen, they make tasty desert-type items. Perfect replacement if you're eating too many freezees during this summer heat, hehe.
