Re: Fermented Pasturized Fruit Juices...?

When pasturized orange juice, either in a carton after being opened or made from canned concentrate, is left in the fridge for a couple of weeks it ferments. The same happens with other opened or made from concentrate pasturized sweet fruit juices, Is this fermentation alcoholic? If not what are the fermentation products produced

    Chances are, the fermentation IS alcoholic. All it takes is for one yeast cell to find its way into the juice. Unfortunately, bacteria can do much the same thing.
