What do you suggest I make?

I have two potlucks to go to this week. One is treat day at my work on Wednesday. The next is a potluck dinner meeting Thursday. I don't want to spend too much money and I'd prefer simple things that most would enjoy. Any suggestions?

    Meatballs..

    1 cup milk

    3/4 cup quick-cooking oats

    3 tablespoons finely chopped onion

    1-1/2 teaspoons salt

    1-1/2 pounds ground beef

    1 cup ketchup

    1/2 cup water

    3 tablespoons cider vinegar

    2 tablespoons sugar

In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. Place in a 5-qt. slow cooker.

In a small bowl, combine the ketchup, water, vinegar and sugar. Pour over meatballs. Cover and cook on low for 6-8 hours or until meat is no longer pink....

    The easiest brownie recipe ever...

    1 cup Granulated Sugar

    ¾ cups Unsifted All-purpose Flour

    3 Tablespoons Cocoa, Heaping

    2 Eggs

    1 stick Unsalted Butter, melted

    1 cup Nuts (optional)

    1 teaspoon Vanilla

Melt butter in a 9×9 pan in a 350 degree oven.

    Mix dry ingredients.

Add unbeaten eggs to dry ingredients.

    Pour melted butter over.

    Add nuts and vanilla.

    Bake 20 minutes at 350.

Basically, preheat the oven, and just go ahead and put the stick of butter in the pan and put the pan in the oven. It will melt.

Mix your dry ingredients. Add the eggs and mix those.

Then get that pan with the melted butter. Pour the butter out of the pan and into the bowl with your batter. Mix it all together.

Then add the vanilla (and nuts if you want).

Pour it back into the pan and bake for 20 minutes.

The beauty of this recipe is that you do NOT have to grease the pan, because the melted butter does that for you. Your brownies will absolutely NOT stick. ....

    Pizza Casserole

    1 pound Ground Beef

    1 Onion, Chopped Finely

    1 box Pasta 12-16 Oz.

1 jar Pizza Sauce (15 Oz)

1 jar Tomato Paste (4 Oz)

1 jar Tomato Sauce (24 Oz)

    3 cups Mozzarella Cheese

    1 cup Pepperoni Slices

Brown your ground beef over medium heat until nicely browned. Drain off the fat and transfer the cooked meat to a clean plate or bowl. Leaving a bit of the drippings in the pan will be fine. You are going to be sautéing the onion in a minute anyway.

Sauté the onion in the rendered beef fat till soft, translucent and slightly golden on some of the edges. Add olive oil or more pan drippings if there is not enough to sauté properly.

Cook your pasta about a minute short of al dente, using the package timing for al dente. Drain the pasta and put it in a large mixing bowl.

To the drained pasta add: browned meat, sauteed onion, pizza sauce, tomato paste, and tomato sauce. Stir to combine.

Put half the noodle/meat mixture into a 9×13 pan.

Spread 1/2 of the mozzarella cheese over the top. Spread pepperoni in a single layer over the top (using about half of the pepperoni).

Repeat the process of adding the second half of the pasta, meat mixture and mozzarella cheese. Add one more layer of pepperoni.

Pop in the oven for 45 minutes at 350 degrees or till heated through and bubbly....

    Chicken Pot Pie IX

    - Directions

    Preheat oven to 425 degrees F (220 degrees C.)

In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.

In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.

Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.

Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.
