what is a good side for sandwiches?
nothing really hard (i'm working with very few ingredients here) and nothing plain like just carrots or something.

I think it's important you tell us what kind of sandwiches you plan to serve.
When choosing a side to go with a meal the side must be able to complement the main fare or entree being served.
If for example, you were serving pulled-pork sandwiches, I'd recommend a creamy cole slaw. That cole slaw however, might not go well with whatever sandwich it is you have planned for that meal.

I usually dont have a side becuase I pretty much add lots of toppings to my sandwiches (lettuce, tomato, onion etc) but for somewhat of a plan sandwich, I'll add a pickle on the side

Sandwiches need simple sides.
You could do potato salad, pasta salad, cole slaw or assorted veggie sticks(not just carrots) potato chips, diced fresh fruit, assorted pickles and olives.
You can also go the other route and do soups.
Tomato soup or chicken noodle are classics with sandwiches.

Slaw
A good fresh vinegar slaw, the type that would work well in a hot sandwich or on the side. Maybe in a light vinaigrette or an asian sesame dressing.
