I am going on a vacation to Disney World in Orlando. I'm going to stay at the Coronado Springs - can I go to the spas at other resorts like the Grand Floridean or the Dolphin if I am not staying at those resorts? I know I can go to their restaurants.

You can purchase spa treatments at any hotel whether you're a guest or not. Health Club facilities are for hotel guests and those purchasing spa treatments. Note that the Grand Floridian Spa will be closed from Sep 19, 2011 until early 2013.
