Spiritually speaking, bamboo has me bamboozled. How did it evolve to become so yummy?

Question

I mean, since it is so yummy, my "kind" and I like to eat a lot of it.  Other animals around these parts of China do as well.  The humans even use it a lot for all kinds of things, including building things with their thumbs.

With bamboo so in demand, how did it avoid extinction of the millennia?
Was the influence of agriculture and cultivation from you homo sapiens the key factor?

Bamboo is, like, everywhere.  It bamboozles me.

Bamboozled is a book by David Legge and is one of my childhood favourites. 
It's plot is a little girl going to her grandfather's house and noticing all manner of odd things.
It is a favourite for young and old alike.  

I think there may even be some bamboozling bamboo in one of the pages.

Back to bamboozling bamboo boggling wee bitty beasties.
Pandas have a severe case of beingawesomeitis, bamboo is the only known cure to stop them exploding in a crash of awesomosity and ending the world as we know it.

People preserve bamboo to stop pandas destroying the planet.

It's clearly proof of unintelligent design.

a) Lobsters cannot cut down bamboo.
b) Lobsters cannot chew bamboo.
c) Lobsters cannot digest bamboo.
d) Lobsters live far from where bamboo grows.

Thus it's obviously very badly designed lobster food, assuming you don't need actual evidence that:

1) it has a specific purpose, or
2) it has been designed at all, or
3) any such designer can be identified.

Otherwise it would be very bambooozling indeed!
