Fermented Peanuts vs Roasted Peanuts?
I love sauerkraut so much that I have started making my own with baby carrots. The fermenting process unlocks all the nutrient rich vitamins and minerals in the carrot that our digestive systems would not have the ability to access. I also love boiled peanuts and was advised by nutritionist never to eat roasted peanuts because roasting peanuts changes it into something unhealthy. Boiled peanuts are excellent so I figure fermented peanuts must be the BOMB of great taste and healthy benefits. Chinese or Asian Markets sell fermented beans for stir fry that are supposed to be really tasty. I used to eat roasted peanuts all the time because my junk food loving wife had them all over the house. Ever since I found out roasting them makes them worthless for my health I have quit eating them. Boiled Peanuts are hard to find unless you drive way out into the country. I can make my own sauerkraut and pickled carrots so I thought I could also do fermented peanuts. Are there any special instructions for fermenting peanuts?
There is no need for boiling anything when fermenting sauerkraut and no need for dumping sugar into the process like the processed foods companies do. I suppose the oil in the peanuts is why I can not find any raw peanuts anywhere that I can boil. The oil in the peanuts gives them a short shelf life so all anyone can find is roasted junk food peanuts.

Beans do not have a whole lot of oil. I would doubt that you can ferment peanuts. If you notice most nuts should be refrigerated to have them last very long. That is because the oil in them will go rancid. You ever see kidney bean oil in a market. That is because they have little or no oil. Rice, wheat, cabbage, cucumbers etc... have no oil to go rancid. So they lend themselves to fermentation. Why not just boil them yourself. If you were going to ferment them most likely boiling water would come into play anyway.

Well there are plenty of websites telling you how to ferment other actual nuts that are more expensive, such as cashew, almond, macadamia, etc. If there are fermenting issues that are specific to peanuts, I wouldn't be surprised to find that there are also specific solutions. I came across a few websites of people trying to ferment peanuts, but it still seems to be a a minority among fermentation aficionados. I would love being able making my own sauerkraut out of cabbage and carrots.
