For my own personal use. How would I go about creating a book that contains several other copyrighted books in my own custom anthology?

You would need the permission of the copyright holders to reproduce the work if it is not in public domain.
Needless to say, there's very little chance any of them will give you permission.

No publisher will touch it. Kinkos got hit with a multidollar lawsuit a few years ago.
