I need a simple vegitarian reciepe for 1 person that I can serve as thier main course at Thanksgiving?
Only one person in our family is a vegitarian. Last time I cooked a tofurkey they ate 1 small piece. No one else would touch it nor the other vegitarian food that was brought. I couldn't even get the vegitarian to take the food home with them because they had to drive 3 hours home, so it was all thrown away. I hate to waste food, so I need a reciepe that is not too much but will satisfy a vegitarian, the way a turkey or ham would satisfy a non-vegitarian.
This is a meal for 78 I will only be providing the Turkeys, hams and some vegitaritan main course. Every one else brings sides and desserts.

veggie lasagna would be delicious. You can make a small batch in an individual casserole dish( bit you could find one at a second hand store) Made ahead of time and then heated in the microwave or slipped into the oven with the rest of the items would work just fine.
And you can bet I would have taken some home. A 3 hour drive that might involve some primo left overs calls for bringing a cooler along just in case. Nothing like Thanksgiving left overs... LOL
you might want to remind your guests to do that, especially for those who live further so you are not stuck eating left overs for the rest of the winter.
FYI: your vegetarian relative sounds like a picky little brat. I agree with the gal who suggested she eat the vegetarian sides. Everyone makes lots of vegetarian sides with this kind of meal.

Don't you have vegetarian sides that other non-vegetarians like already?
Biscuits? Soup? Salad? Pasta salad? Green beans? Mashed (sweet) potatos? Pies or fruit crumbles for desert? She can do as I do and pile her plate high with just sides. I would never ask for a full vegetarian maincourse if I can't even eat it all or take it home. That's just plain rude. It's only for one meal. There's nothing wrong with a bunch of sides that make up a meal.
If you want a vegetarian main course then maybe look into vegetable pot pie, veggie pasta, or veggie lasagna. These are often enjoyed by everyone, vegetarian or not.
If she just doesn't eat the food you provide though then I just wouldn't provide all that much. Just a few normal sides like I listed earlier so if she refuses again then others can eat them.

I don't live in a country where Thanksgiving is celebrated - but I'd NEVER be satisfied with 'vegetarian sides' at Christmas or any other celebration - I'd consider it rude to expect me to be. Thanks for your consideration for veg*n guests, or just one guest in your case - though s/he does sound like a picky pain; a cooked tofurkey wouldn't suffer from a 3 mile drive.
Here's a site with several Christmas recipes for vegans - I've tried some of them and they were really good - and much nicer than any faux turkey. You could reduce quantities or freeze leftovers:

Last year for Thanksgiving, I prepared gnocchi (small Italian pasta) as one of the main dishes and everyone loved it. Homemade gnocchi can be hard to make at first but tastes great, so it's worth it.
There are many side dishes you could make that are vegetarian, too. These include sweet potatoes, green beans, cranberry sauce, roasted potatoes, ect.

Tofurkey Thanksgiving feast. It is vegan turkey stuffed with vegan stuffing, and comes with a side of vegan chocolate cake. You can make mashed potatoes with a milk substitute (almond, oat, rice, coconut, hazelnut, cashew, or help milk.) You can make stuffing with vegetable broth instead of chicken broth. Corn and cranberry sauce are already vegetarian. You can make lots of vegan things, just be creative!

PLEASE stop misspelling vegetarian! Spell check underlines it, so I have no idea how you managed to spell it wrong SO many times. ASK this vegetarian what you can make. Most likely they will be happy with all the side dishes. I always have been.
