Clay Lacy Aviation, does 90% of all air to air filming or movies and commercials -
Movies like "Airport", "Top Gun", or "Air Force One" were made by them -
Almost all TV commercials are made from their Learjets - "Astrovision" -
Cameras are inside the cabin, shooting through a periscope system -
Can be used up to maximum flight level of the airplanes - 45,000 ft -
I used to fly for them, part-time in the 1970s-1980s -

The images are shot from another airplane. Sometimes the photographer's airplane is specially adapted for the purpose, with special platforms or windows that give a clear view of the outside for shooting.

I guess they use helicopters, with the cameramen inside, to fly in the air and film it. They wouldn't go too close, probably fly far away and zoom in.
