What is a popular local food in Taiwan?

Stinky Tofu.

Roasted corn cob, boiled and fried cabbage-stuffed dumplings, fat noodle soup, "hot pot" (a mixture of meats and veggies that you boil yourself at the table), fried squid/baby octopus, broiled sausage, cooked tiny frog, rooster testicles, roasted chicken feet, hard-boiled in tea eggs, roasted duck, boiled fish, jumbo raw oysters on the half shell, rotisserie cooked wild pig, a multitude of mixed fresh veggies, and... too much to list. The food here in Taiwan is quite varied and delicious!
