What is your favorite Christmas Eve snack to make?

I make Christmas Eve special with special snacks we don't normally have....and I'm looking for new ideas.

    Seafoam Candy

    1½ ccups sugar

    ½ cup dark corn syrup

    1/4 cup hot water

    few drops of green food coloring (if desired)

    1 stiff-beaten egg white

    ½ tsp. vanilla

    ½ tsp. white vinegar

    ½ cup broken nuts

    1/4 tsp. maple flavoring (optional)

    Combine sugar, corn syrup, water and food coloring. Cover; place over moderate het; heat to boiling. Remove cover after 5 minutes.

    Cook to very-hard-ball stage (260ºF) and remove from heat.

    Cool slightly.

    Add gradually to stiff-beaten egg white, beating constantly until very stiff. Let cool, stirring occasionally. Stir in flavoring and nuts.

    Drop from buttered teaspoon onto buttered cookie sheet.

    Makes about 30 pieces

    Texas Firecrackers

    4 sleeves of saltine crackers

    1 cup EVOO

    4 Tbsp dried red chili peppers (crushed chili flakes)

    4 tsp garlic powder

    In a large plastic container lay down one sleeve of crackers, pour 1/4 cup of Olive oil evenly over them and dump 1 Tsp of garlic powder and 1 Tbsp of dried peppers. Repeat until all ingredients are added to container. Seal the container and gently spin/shake it to coat crackers and then set it upside down on the counter. Flip every 15–20 minutes. for about an hour to coat crackers evenly.

    All I serve is snacks for Christmas Eve. I usually do a total seafood fare for Christmas Day, so I will serve a prelude to the next days dinner. The veggie and fruit trays are desperate attempts to make up for the fact that there is no real meal..LOL And of course there are sauces. Home Goods and Pier One has the cutest serving dishes for this type of thing.

    Spicy Lamb Meatballs

    Coconut Shrimp

    Scallops

    Sushi (Pier One has the cutest chopsticks, and these are fun to make, just make sure to get "sticky rice")

    Tempura Vegetables

    Veggie Tray

    Fruit Tray

    Some sort of Punch

    Nacho chips ... line the cookie sheet with aluminum foil, preheat the oven to 400. Sprinkle nacho chips over the cookie sheet. Sprinkle grated cheese over the chips (grated cheddar, monterey jack). Mince and sprinkle over the cheese: green onion, green bell pepper, fresh tomato, jalapeno peppers (optional).

    Bake until the cheese has melted.

    Dilled pork dumplings:

    2 Tablesp butter

    1/2 onion, chopped fine

    1/2 cup mushrooms, chopped fine

    1/2 lb. lean boneless pork, chopped fine

    1/4 cup dairy sour cream + 1/2 tsp lemon juice + 1/4 tsp. salt + 1/4 tsp dill

    1 refrigerator package of Crescent roll dough

    Brown onion and mushroom in butter. Add pork, cook and stir over med-hi heat 5-6 minutes. Reduce heat. Stir in sour cream mixture and keep on heat until if is heated through ... do not boil.

    Remove from heat.

    Open package of dough, unroll it, separate the pieces and use each piece to make a dumpling. Place finished dumplings on cookie sheet and bake as per instructions on the dough container.

    Serve hot.

    You can make the filling ahead of time and warm it up in the microwave just before making the dumplings.

    Or spinach pinwheels (spinach, crescent roll dough, cream cheese).

    Warm Gingerbread Cake with Whipped Cream and a little Cinnamon. Also with egg nog!
