first of all if you find it difficult, should you be doing it? I became vegetarian 11 years ago and didn't find it hard, i just stopped eating meat and fish. after a few years, i did find it hard and felt my body was craving meat, that's when i started eating meat again.
go on vegetarian websites and buy a vegetarian cookery book, don't be afraid to experiment and you can simply use recipes you were using before just substitute the meat with a vegetable, you'll be surprised by the variety of vegetable there it. also try quorn or soya products, some people don't like them but personally i do and still eat them now when i fancy a change from meat.
you can make soups, pastas, lasagna, cassereoles, ,moussaka, rice dishes and like i said don't be afraid to try new things! good luck

Just watch a few YouTube videos of animals being abused and slaughtered in factory farms - you'll never want to touch meat again. Also, think of meat as dead animal flesh instead of a food ingredient, and it'll become more and more gross over time.
Also, think of the fact that you'll reduce your cholesterol and will be much less likely to ever get a heart attack, if you're a diligent vegetarian. Just read about all the benefits of the veg diet and you'll come to it on your own :)

Just don't eat meat. Eat more beans and peas. They are very good to eat instead of meat. Especially soy.
