2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan
1. Melt the butter in microwave, then allow it to cool until it is room temperature.
2. In a large bowl mix the eggs, milk, room temperature melted butter, flour, and water until well blended. The batter may have a few lumps if your butter isn't room temperature. The batter will be thin!
3. Heat a small non-stick pan. Add butter and allow it to coat the pan
4. Pour about 1/4 cup of batter into the pan (or more, depending on pan size and how big of a crepe you want). spread the crepe batter around the pan, so that it forms a wide circle.
5. Cook for 30 seconds, flip to other side, then cook it for 10 more seconds. (just so its very light golden colour)
You can add more sugar or other ingredients to your crepe mixture. I usually add a little bit of salt, and more sugar. You could add vanilla extract, or even honey to make it sweeter.
Once the crepe is cooled, add the ingredients you wish. Whipped cream, strawberry, raspberry, banana, peanut butter, nutella, jam, ice cream, honey, cinnamin, nutmeg, ginger, etc. The list goes on and on. Then simply roll the crepe the way you desire. You could roll it like a burrito, even.
Good luck. Crepes are delicious. :) I usually add whipped cream and jam to my crepes if I don't have any other ingredients on hand.

It's Cannelloni, usually stuffed with sweetened ricotta cheese, right?
The mid-east variety - not so - good is Cameloni. One hump or two?
