What's the best deep fryer?

I deep fry mostly in lard. I can't get a deep fryer with in immersion element due to the risk of fire when heating a solid fat. Can someone recommend me a good fryer? It must have an adjustable temp and be able to recover temperature quickly so my fries come out crispy.

    Truly an iron pot like a dutch oven or an Iron soup pot on a good stove with a good thermometer is the best that I know. The cast iron pot will hold heat longer when you add in things to deep fry. One of the problems with many of the electric deep fryers is they have trouble regulating the heat when you dump in the food. The temp drops and allows the food to get that greasy taste. Fries or potato crisps are a good example. The higher the temp the less you are likely to end up with a limp greasy fry. Plus I think they are safer. Those little 4 quart fryers are an accident waiting to happen.

    You also can't beat the price and you can use it for something besides frying.
