custom meat cutting- how to order my lamb?
Hi all,
I've purchased a whole lamb and had arrangements to get it processed. The processor asked me to fill out how I want it cut up. These are my options:
Legs: whole or split or sliced?_________________________
Shoulder: whole split or sliced
Blade chops? (I think this is shoulder chops...but this may also be rib chops) yes or no?
Loin chops how many per package
stew meat yes no
ground yes no....
All stew and ground are usually 1 lb. packages.
Anyway, this is the first time buying a whole animal, so these are unfamiliar terms. Can somebody please explain the cuts in terms of market cuts. Also, if you have suggestions on how I should order this cut up, that would be great. This is for a couple, so smaller pieces are preferable to huge hunks.

i would keep the legs whole (a roast leg or lamb is one of life's beautiful things)
shoulder sliced
chops yes
loin chops yes (these are the commercial lamb chops u see at the supermarket)
stew meat yes (make Irish stew or tagine or middle eastern dishes)
ground yes. lamb meat makes the best kabobs and u can do a 50/50 burger with half lamb half beef

white meats are extra elementary to digest and extra healthy so I consume each and all the above yet have something distinctive daily so if I even have pork it extremely is going to likely be a week earlier I even have it returned. rooster,beef,pork,fish, turkey,pasta,lamb
