I could use some help using up these egg whites?

Just made lemon curd, so I have 5 egg whites to deal with. I really want to make a sponge cake or something of that sort, but I don't want to break any more eggs (can't find one that would just use up those whites). I was going to make meringues, but that would be WAY too many meringues for us to eat. We don't really eat omelettes or scrambled eggs, and if I freeze them I ALWAYS forget them and they end up freezer burned and get tossed anyway.

So, does anyone know of a cake recipe (preferably) that just uses egg whites (bonus points if the recipe calls for exactly 5 egg whites), or a way to store meringue cookies to keep them from going stale?

Update:

Every single angel food cake recipe I've found so far called for 12 egg whites, so if you've got a recipe that only calls for 3 or so, gimme! That's precisely what I'm hoping for.

Update 2:

Oh, also, I don't own an angel food cake pan, so that's the other reason I don't really want to make angel food cake. Unless you can make angel food cupcakes? Dunno how you'd hang them upside down though.

I was gonna suggest meringue cookies... I'm pretty sure they'll freeze okay...

Here's a white cake recipe using 3 egg whites:

then for the 2 remaining, make 7 minute icing... (which is the type of icing from my BHG cookbook that I use to use)

angel food cake! I think most recipes call for 3, then just use the left over ones to make meringues!

Your best bet to divide them up and make sure you get what the recipe calls for is to measure the whites out into five different containers of some sort, with a measuring cup, until you have EXACTLY the same amount in each container. Or you can eyeball too. Up to you!

If the recipes call for 12 egg whites the just make about half the recipe (i.e. a smaller cake)

    Or

You and always make a meringue topping for the lemon curd. It's just egg whites and sugar, see:

    Make meringues.

Or, make a couple of egg white omelets. That's what I usually do with left over egg whites.

Use some tomato, crumbled, bacon, shredded carrot, a little minced onion and some spinach. Maybe some cheese...whatever you like really.

Make meringues with the amount of whites you have.

The link will guide you through them with different numbers of eggs.

cook them as if you were making fried eggs. then cut up the egg whites in small bits and add to a large fresh garden salad.
