What’s your favorite omelet?

Question

I’m having a birthday brunch for a friend Sunday.  There will only be like 8 people.  I’ve included omelets on the menu.  The S/O and I will cook them to order for the guests.

At any rate, I’ve been told that I like boring omelets lol.  Usually they are some combo of cheese, tomatoes, mushrooms, spinach, and/or  bacon.

I’d like to offer a reasonably wide variety of fillings so please tell me your favorites.

I've always preferred veggie omlettes to ones with meat in them.  My favorite veggies are either a combo of spinach, caramelized onions, mushrooms

OR

an omelette with spinach, onion, zucchini, green chiles, tomatoes and topped with salsa and sour cream.

actual SPANISH OMELET a million small potato, sliced a million small onion, diced 4 eggs One pinch of baking powder Salt to style Olive oil Fry the onions and the potatoes interior the olive oil till the potatoes are comfortable. Drain and enable cool. upload the eggs, baking powder and salt and combine each and every little thing properly in a bowl. Fry the mixture in a medium pan with in basic terms a drop of olive oil so it would not stick till the eggs looked cooked yet earlier the omelet seems too browned.

Ham, cheese and baked beans....known as a Fenway omelet in my area.

I also like loaded omelets so I would include onions, peppers, broccoli, spinach.

Salsa is good in an omelet.

I like simple things so my favorite omelet is Egg with Cheese and Ham. Its delic!
