She didn't become human again. The movie alluded to a story that killing the first vampire (Marcus) would cause all other vampires become human, but a short time later the same character that mentions it says that story was a lie that Marcus invented to protect himself from Victor killing him. She drank the blood of the old Corvinus (father of the first werewolf and first vampire) and gained new powers; one of which was being able to survive in sunlight as we see at the end. She was still a vampire though.
