Indian cuisine...simple samosa?

what spices and ingredients for stuffed Samosa...baked or fried?

    You can use spinach and spices...curry or a mix of Indian spices mixed with the spinach. folded into filow dough and baked. Not as fattening this way.

    We take boiled potatoes, mash them, add some peas and raisins, mix with some salt and garam masala. Then we take some wheat tortillas, cut them into quarters, take a thick flour and water slurry (paste, really), and stuff the tortillas with the potato mixture, and use the paste to seal it. Let it sit for 5 minutes (for the glue to firm up), then fry.
