Are multiple cores better than core clock for video editing and 3d?

I know high clocked dual core processors are better than quad core processors on games because games run better on two cores. But for video editing and 3d, is it better to have multiple cores or a higher core clock.

I'm debating between a AMD 8 core and an i5 or an i7.

    From what I read the more cores the better for video editing. Especially if you are using a program that can utilize all the cores. You should go with AMD since it actuall has 8 cores (unlike intel and it's simulated ones with hyperthreading) and cheaper.

    I used a single core to video edit and then a dual core with the same program and barely saw a difference, but watching bulldozer videos.
