How to say "Yes please!" enthusiastically in German?
I know that I can just say 'Ja bitte!' but I was wondering if there is another phrase used by native Germans to express enthusiasm in this context?

You could say "Ja, gerne"
or "Ja, sehr gerne"
both means "Yes, with pleasure"; the second one would actually mean with much pleasure (but i don't think that's a valid expression in English)
About the above comment:
"Oh ja, bitteschön, das wäre so toll!"
You really don't want to say that. It's too much and people would think you're either overdoing it or worse: think you're being sarcastic.
