    If you're talking about as an ingredient in baking.....substitute with equal amount of applesauce.

    Canola oil, practically any other kind of cooking oil except olive oil, depending on what you're making.

    You can also melt and use butter or margarine, if you have it. I wouldn't use olive oil unless it was light olive oil.
