Can people be kosher?
No, I'm not inquiring about cannibalism. I'm wondering if there's a term for people who fulfill the requirements of Jewishness.
This is in contrast to Jews who don't keep dietary laws, etc. etc.

As you answered yourself -- people are not kosher.

Jews are a tribal ethnic group.
Jews discuss ourselves with relation to religion on a continuum from
"observant" to "non observant"
Jews who have no connection to Jewish society are "unaffiliated"
Jews who have fallen for the anti-Jewish worldview are "self-hating Jews"
Non-Jews who follow Jewish teachings have started to call themselves "Noahides" or "children of Noah"
(this is a reference ot the Jewish belief that anyone can be righteous if they follow "the seven laws of Noah" - an outline of basic human morality)
