Fellow veg*n's, what did you have for dinner today?

Tonight for dinner I made one of my personal favorite dishes.

Portabella mushrooms, red peppers, green peppers, and spinach all sauteed in a creamy mushroom sauce. Along with a side of organic salad with spinach, kale, red cabbage, carrots, avacado, and lime juice as dressing.

What was your dinner tonight?

    Oh that sounds good!

    I made a veggie burger and I topped it with guacamole, salsa, lettuce and whole what bread. It was sooo good. I couldn't eat anything else because it made me so full! It was my first time making a veggie burger too so it didn't turn out so well and I think I know why :P but I learn as I go!

    Mmmm, sounds great!

    I had zucchini and spinach enchilasas with cashew cheese, chipotle salsa, and guacamole.. and a baby romaine salad with toasted pumpkin seeds, and cashew sour cream. Yum yum!

    Nice dinner! I had quinoa with spinach, onion and black beans. I also made chili with tempeh and pasta sauce... I was on a role :)

    lots of people had an avacado tonight.........i had a avacado salad with onions,peppers lettuce and other stuff topped with vegan ranch dressing.

    I made vegan chili. It's kidney and pinto beans, some lentils, corn, tomato sauce, tomato paste, and spices. Had it in a tortilla.

    I didnt eat anything other than lays chips today. But that meal sounds delicious.

    I haven't worked it out yet (early Monday afternoon here), but I've been thinking about caramelised onions today so something that goes with those.

  • I marinated tofu in a lemon-thyme-basil marinade and grilled it, microwave-baked a potato, and had a small green salad with it. Yummeh.
