Servers: Does this seem like a lot to you (tip out)?

I just started a new job at a nice Italian place. I've trained twice with a guy named Carl. He told me the tip out is 6% of sales, period. When we worked, he was alone with three busboys. They were amazing: served his food, wrapped his food, stayed on top of everything. The bartender was the owner, whe also SERVED drinks when Carl was busy (pretty cool, right?)

I overheard him tell a girl last night that he rang $600 in sales.

Assuming he got 18%, that is $108 in tips, right?

And if he tips out 6% of sales, that's $36

which means he walks with $72.

Does that sound right to you? Basically he's tipping bus, bar & expo.

    If that's house policy there's not much you can do about it. I never was required to tip out on my ring--it was on m make. I tipped busser 20%, 15% if they weren't "on it" as much. So yes, that seems high to me...very high. And NEVER tipped an owner.

    Well 6% for you to tip out seems a little much.. I would usually tip out 2% but there was also 10 servers on the floor so maybe if there is less servers at your restaurant you have to tip out more.
