Beginning Plans for starting a bakery business?
I plan to own a cake and bakery business someday and I was thinking how to plan this out. I have the basic skills in baking and cake decorating right now I'm in high school and a junior. I was going to take pastry/culinary arts in college but i dont want to make regular food, and if i did i wouldnt want to anyway because i am a vegitarian and i wouldnt want to touch meat and the only way is to go to a specific school for vegitarians (iv heard of them) and that would be rediculous because i dont even want to take that kind of class anyway. If anyone has any suggestions for colleges that offer a pastry arts program that doest require the other stuff please tell me. If culinary arts wouldn't be required to have a cake business, I thought about taking art and business, although I don't know if I would do double majoring or if I do minor, which would be best? Also I would take some other classes such as taking some in Wilton school in Illinois that teaches a lot of cake decorating stuff. So my plan is to go to college and major or minor in art and major or minor in business, then take classes in a separate, non college school for additional experience. Does this sound like a good starting plan? And about taking a pastry arts class, is there a place that teaches specifically desserts and baking and not meal food? If not, would culinary be required anyway for starting the business? Thank you guys!!

Speaking from someone who was in nearly the exact same position as you throughout high school, let me offer some of what I have learned from experience:
+The number one bit of advice I would give anyone who even THINKS they want a job in the food service industry may sound like common sense, BUT; get a job in the food service industry. Its a whole different world once you cross over into the threshold of the professional kitchen, and its a hard business to make it in that is rarely rewarding unless you love what you do. Not questioning your passion in the least, just encouraging you to explore. Additionally it will make you a much more educated student with a stronger work ethic that will impress chefs down the road whom you will want to have as good contacts on your side. If you cant get a job, intern.
+ Additionally, get started marketing your cakes and taking orders out of your own kitchen; you dont have to wait for college to teach yourself valuably via trial and error. Just dont take it too far because if you advertise to the general public as an official business the FDA can yell at you for operating without a licence.
+A foundation in very basic culinary principles is something youre going to want to have just so you can operate knowledgeably in the industry and make yourself more marketable when jobs are tough. And remember, the culinary world is not always segregated hot food and baking/pastry, they borrow ideas from each other and it can also inspire you to take hot side techniques and experiment in the bakeshop with them.
+On the vegetarian note; youre going to be very hard pressed to find a culinary school that will allow you never to touch meat. Assuming you are in/around IL, there arent any I know of around here. You can take just pastry programs at The French Pastry School, (they also offer just cake decorating), and maybe Kendall and the Art Institute although I wouldnt reccomend the latter. Look around.
+Buisiness will probably go farther since art is something that comes from you naturally, but its good to hone either skill. You arent realisticly going to leave school and just start a business, youre going to have to work for other people for a while first so get a taste of both and then see.
