is insulin a carbohydrate?
I have a book that states in regards to jersualem artichokes : "There are virtually no carbohydrates in the tubers, since this plant stores it's carbs in the form of insulin and there is little sugar. However when stored, the insulin is gradually converted to sugar and the tubers may then contain as many as 235 calories in a pound, still a low-calorie vegetable."
Far as I know, insulin is a hormone and not a carb. I'm guessing the book must mean inulin. Wouldn't it be interesting if we could find naturally occurring harvestable insulin though?

Youre right, insulin is a protein based hormone, not a carbohydrate....it cant and wont convert to sugar. Sounds to me like the person who wrote that book didnt know anything about insulin or sugar. As far as I know insulin is found only in animals, not plants. As for naturally occuring and harvestable insulin, it already does exist and up until fairly recently was the only form of insulin available for human diabetics. It was harvested from pigs and horses. Insulin from animal sources are still used today, mainly for those who have intollerances to synthetics.
ETA: Your pancreas releases insulin (from the islets of Langerhans) in response to the presence of sugar in the blood stream. All carbohydrates are sugars or convert to sugars. Insulin bonds to the sugar and carries the sugar through the cell walls so that it can be utilised by the cell for energy.

Insulin is most definitely not a carbohydrate. The person very likely meant inulin.

Insulin is a hormone and hormones are all proteins. However, you're probably misreading "INULIN" which is a polysaccharide which is a sugar and a carbohydrate.

No carbohydrates causes your body produce insulin from the pancreas.

fruits grow on trees, shrubbery and mostly above earth and vegies grow in the land (mostly) and are root plants ie pumpkin, potatoes, raddishes etc are root base
