Can I make potato salad and potato skins out of the same potatoes?

I am trying to save money and still come up with foods that I can serve at a party. I was wondering if anyone had done this before, and if so did it work? I wanted to bake some potatoes normally. Let them cool somewhat, remove the inner potato set aside to make potato salad. Take the skins, sprinkle with cheese, green onions and bacon bits then bake to get cheese melted and skin crispy. Serve that with sour cream or ranch. I don't want to deep fry the potato skins. Will this work?

    I have not done it, but if you were careful about removing the potatoes from the skins, I do believe it could be done. Sounds quite tasty actually and cleverly frugal actually.

    Yes, it will work.. Just don't bake the potatoes too much or else the potato salad could become too mushy. Also, leave a little bit of potato flesh close to the potato skin and they will come out just fine. Hope this helps.

    After you remove the inner potato, pop the skins back in the oven for longer until they crisp up then add your cheese etc at the end until it melts.

    Yes you can do this and it sounds good too, but you can make a German mash potato salad..if you're going to bake the potatoes.=)
