Can I make chicken soup with no broth/stock?
I have chicken and all the veggies for it. Just no chicken broth or stock. We have beef bouillon but I don't know if it'll taste good. I want the flavors to blend well
Can I just use water? If so, what seasonings can I add to it so it gives the soup flavor and not a bland taste

Using water is fine; it's how chicken broth is made. Simmering the chicken with onion, carrot, celery, thyme, salt, pepper, parsley, and garlic if you like will produce a flavorful soup. After you remove the chicken, reduce the broth for a more concentrated and flavorful broth. Adding beef bouillon will muddy the flavor.

If you have enough chicken,the soup will be fine.The beef bouillon will be fine in it too.No big difference.
Put the chicken in a pot and cover it with cold water. Don't add too much water, or it will be tasteless. Just enough to cover the meat by an inch or so.Add some salt, and bring to a slow boil.Remove the dark scum as it boils.Do not add the veggies yet. Cover and simmer until the meat is cooked. Cutting it up before boiling will reduce the time needed for it to cook.Take out the meat,and strain the broth in a clean pot if there are little pieces floating around in it.Heat it up again and add your veggies.You can add more boiling water and the bouillon if you want more soup.Don't overcook.Next, put 2 tbs of corn flour or corn starch into a cup and add a third of a cup of COLD water, mix well to dissolve it and add to the soup while stirring.This will thicken it. Withdraw from the heat and add shredded chicken meat to the soup. What is awesome to do at this point is to beat 2 eggs very well with the juice of 1/2 a lemon and add VERY slowly to the soup while stirring quickly.If the soup is too hot,or you add it too quickly, it wil curdle. Do it slowly,have someone drip the egg in the soup while you stir quickly,and you will have the most amazing chicken soup.!!

When I make chicken soup I never use broth, just water. I use a whole chicken, plop it in a large pot, add onion, garlic, carrots, celery and herbs like oregano, sage, thyme or whatever you've got. Add enough water to cover the chicken, put a lid on and put the pot on medium heat. When the water starts to boil, turn it down to a simmer and let it go for an hour or so, covered. After an hour turn your chicken (if it's a big one). Let it go for another half hour or so, add water if needed. I like to add a little white wine about now, or lemon juice if you prefer. Check your chicken and if it's falling apart, it's done. Gently remove it to a colander and bowl to separate the meat from the bones. It can be time consuming, but using a whole chicken really adds to the flavor.
A hint, if you do use a whole chicken - use a chicken or turkey sock. Basically it's pre-knotted cheese cloth. Otherwise, just use cheese cloth. Wrap your chicken and herbs in the cheese cloth for easy removal. Saves time fishing all the parts that fell apart out of the pot.

You will get your broth from cooking the chicken and veggies, and the broth is a waste of money IMO.
Sage, Rosemary and Thyme are 3 I use.
In a restaurant kitchen they will bring a big pot of water to the boil and throw in roughly chopped carrots, onions, and celery and depending on the flavour they want they may do a chicken or fish frame and let it simmer away and use throughout the day as their stock for their dishes.

Seasoning: Make sure you put onion and 4-5 cloves of chopped garlic. Saute in olive oil for a stronger flavor for 5 mins first, then add your chicken and veg. Do you have canned tomatoes? or canned beans in water? That will help flavor and juices. You could do it like minestrone only with chicken-- add oregano, marjoram, and basil, 1 tbsp each. Fill the rest of the pot with water and liberally salt and pepper it, simmer for 30 mins. One beef bullion cube probably wouldn't hurt or clash. You could add 1/2 cup of small pasta in the last 10 mins too.

In my book, eating chicken broth is the same as putting a chicken carcass in your mouth. Animals are not killed to get dairy or eggs , and though they are mistreated in this process, the fact that they are allowed to live makes dairy and eggs by-products,\. Chickens are always killed for broth. Chickens are not meatless.
