Is there a HDD docking staion product that can take more than one HDD?
I'm looking at something like the Vantec NexStar Hard Drive Dock but would like to know if anyone knows of a similar dock that can take more HDD?

yes, thermaltake use to make them, cheap.
but it had 2 usb cords output.
for multi drives storage you need something with a linux OS embeded on the board, it is called; NAS,
you can also look for a cheap NAS or SAN , used ones with old hdd's are cheap.
