I need a good recipe for a light summer appetizer?

I'm hosting a small get together in June and need a good light summer appetizer. Nothing too heavy or warm, and different but not something people would be apprehensive about eating lol! Any suggestions will be appreciated!

    Caprese Salad!

Ingredients: fresh mozzarella, fresh basil, tomatoes, salt & pepper, extra virgin olive oil, balsamic vinegar (optional)

Slice the tomatoes and mozzarella. Place them on a plate, alternating between tomato, cheese, and basil. Sprinkle with salt and pepper and drizzle with olive oil (and the optional balsamic)

Can be served cold or room temperature. (Just don't let the cheese spoil!)

It's super tasty. Creamy cheese versus the refreshing tomatoes with the sweet basil. The balsamic vinegar adds a nice tang as well.

    Pinwheels:

    Tortillas

    Sliced Black Olives

    Diced Green Onion

    Shredded Cheese

    Cream Cheese

    Any other ingredient of choice

    Salsa (for dipping)

Spread cream cheese on tortillas. Add shredded cheese, olives, green onion and any other ingredient of choice. Roll filled tortilla like a burrito. Cut into 1" thick slices. Serve with salsa.

Bruschetta on crostini is good. - Cut french bread diagonally to create longer slices. brush with olive oil and season with salt and pepper. toast on 350 degree oven for about 6-8 minutes.

Tomatoes - seeded and chopped, minced garlic, some fresh basil chopped small, some olive oil and some salt. Mix all of these ingredients and let sit for as long as you can. Top the crostini when ready to serve.

Why not try this salsa recipe and serve it with a variety of chips? It's a great combination of veggies and you can modify the ingredients any way you prefer.

Not really 'different', but prosciutto wrapped cantaloupe and honey dew slices are a great summer appetizer.

Take a sharp cheese and cut it into semi thin slices, then take and kind of canned pineapple, canned because its sweeter, cheaper, and is in a sugary solution. slice the pineapple rings put the cheese slices on top and insert toothpick. and thats it
