What is your answer to the difficult atheistic question "which God" ?

For me, it is a matter of probability. For a start we know life exists on this planet. The building blocks for life are scattered around the universe. If conditions are suitable, I see no reason why some form of life could not develop amongst the countless galaxies, star systems and planets. The same cannot be said of an imaginary being, not one of which is there any evidence for. Therefore I am atheistic towards gods but agnostic towards alien life.

That's like if I were to ask you, "of the set of entities {1, 2, 3...n}, which one do you believe exists?"

You ought to reply by pointing out that my question makes the odd assumption that only one of the set's member can exist.

Furthermore, suppose that, contrary to common belief, there is no property or set of properties which belongs to all and only the members of the set. In which case, it makes no more sense for me to ask you "which member" than it does to ask "which one of the objects {a, b, c, d...}, each taken from a randomly-chosen branch of the Porphyrian tree, do you believe exists?" For that is more or less what the atheist is doing when he asks "Which God?", because there is no one property or set of properties which belong to all and only those objects which are called gods

(for example: some (of the entities which human beings commonly label as gods) are material beings, some are immaterial beings; some are persons, others impersonal; some are individual objects distinct from other individuals, while some are aggregates of all other objects; some moral, some ammoral; some can change, some unchanging; some temporal, some timeless; some exist eternally, some have finite existence, some are necessarily existent, while others are contingent...)

All they have in common is their name.

Also I ought to add, in anticipation of the response that "what all gods have in common is that they don't exist" or that "they were all made up by the human mind" or that "they all lack evidence," etc: all of these responses beg the question, for no one who believes in a god will accept that "all gods are delusionary/unjustified/non-existent/etc" Similarly, no scientist would accept, as an answer to the question "what does all scientific work have in common?," that "science is socially-constructed ideology in the guise of objectively-grounded truth/nonsense on stilts/hogwash and devilry/etc" (just an example of course, I would never endorse such a view of science).

From my experience, they start talking about how all the other Gods and religions are so 'fake', 'unrealistic', 'immoral' and so on; all the while failing to realise how adequately they're describing their own God/religion.

It's not a difficult question at all.

When they say "which god", I say the God of the Bible, the Almighty Creator, the one true God.

It's a bit like picking our clothing in the morning. Decide what you want to wear and wear it.

Usually it's a variation on "the one I happen to believe in".
