Is chicken skin healthy to eat?
Obviously not if the chicken is fried but what about baked or grilled? I usually only eat grilled boneless chicken, but sometimes I'll have wings or legs and of course the skin is still on the meat and bone. Would you say skin is healthy to eat?

It isn't healthy or unhealthy, exactly. It's just LESS healthy than the meat. Chicken skin is extremely rich in oil and fat (no matter how you cook it), but if you eat it in moderation, it's perfectly fine to eat, just be mindful of the high fat.
But then again, who binges on chicken skin anyway?

mmmm friend chicken... no - chicken prepared either baked or grilled (also without the skin) allows much of the fat in the chicken to cook away. Fried chicken keeps the fat in (plus adds the cooking oil as additional fat), and while a majority is directly under the skin, the whole chicken is still infused with it (which of course is what makes it more moist and delicious arrrrrrgh!) if you are not friends with the chicken, that will half the calories.

Its not the healthiest part of the chicken by any means but i don't see a problem with it. Especially since i hate wasting food.

I think the question you are asking is, is fat safe to eat? The answer is yes. You ARE going to die one day, so eat all the wonderful chicken skin you can while you're alive. And fried food, in moderation, is not bad.
