Preserving food in jars??????
I have decided to start making hampers with jams, chutneys, dried fruits and tomatoes/mushrooms etc. Does anyone know how you can make sure these things dont go off in the jars? I was thinking getting the jars with the seal tight lids would be good but what about regular jars? If you buy them from a shop do they seal when you put the lid on or do you need to seal themanother way so they dont g ooff too quickly?

I have canned home grown vegetables. Tomatoes are a high acid food, green beans are low acid. You can increase the acid of green beans by pickling them (adding vinegar as part of the liquid). A good source for information on canning is the Mason Jar Co. There are also some decent websites to obtain information on canning food.

Andy L. Has posted a great link to read for canning; I highly recommend that you follow their advice. Home canning is labor intensive, but the satisfaction of 'putting by' your own produce is immeasurable. Give it a try; you won't be sorry.

Depending on what you are canning, you'll need a pressure cooker or a large pot for a hot water "bath."
