Is it possible to freeze home baked tortes?

I would like to know if anyone has tried freezing slices of traditional tortes, such as sacher and linzer tortes with the fruit fillings and ganache glazes. I love baking, but there is no way for a family of two to finish off a whole torte in 2 days.

My mother in law, Helga, makes amazing torte, and she has great luck freezing. She says the trick is to not skimp on the saran wrap, then put the torte in a large ziploc bag, and finally into the cake container (we have tupperware cake containers). It lasts well.

    Failing that, make smaller torte.....;)

Passover Linzer Torte. If you are planning to make more than one torte and/or want to freeze after baking, tightly line the base of the spring form with aluminum foil. Freeze in pan and then remove cake with foil attached and then freeze in a freezer bag. You must place frozen cake bake on the spring form base or directly on the serving plate WHILE STILL FROZEN. This cake is delicate.

Sacher Torte is known around the world as a specialty of Vienna (at the Hotel Sacher) but is commonly found in pastry shops and in the kitchens it is sure to delight the chocolate lovers in your household. It will keep well for a few days in a cookie tin without refrigeration but for longer storing time do refrigerate. You can also bake and freeze the cake layer in advance. Defrost and assemble and glaze the torte before serving.

Torte will store up to 2 weeks refrigerated. Do not freeze because it changes the texture.
