Skywalk the Macau tower (or BASE off it if you want)
Go walk the Knife back ridge (literal 500ft drops either side of a very narrow ridge).
Go on a tandem Paraglide at Ma on Shan (HK Paragliding is regulated unlike the UK and USA where you can do it without a license)

When I know I need go to HK in the near days or weeks, all I can think about is Lobster with noodles. I don't know the name in Cantonese, but it is very popular and soooo damn tasty :)
