What are some good barbecue and/or picnic recipes?

We are trying to figure out what to have for 4th of July. We want to barbecue or have a picnic or something. We do NOT want hot dogs, hamburgers or friend chicken. What are some other ideas/recipes for good fourth picnic or barbecue foods? Thanks in advance

    For the grill:

    Beer Can Chicken

    Jalapeno Brats

    Herbed Lemon Chicken

    Pork chops or pork ribs

    Shrimp Kabobs

    Grilled Lobster tails

    Grilled veg's

    Grilled peaches and/or pineapple

    For the heck of it:

    Warm Artichoke and Jalapeno Cheese spread with water wafers

    Spinach dip with Triscuit

    Apple and Blue Cheese Tart

    Chili and Olive Pizza Snacks

    Potato salad (mayo based, German or roasted)

    Watermelon

    Reduce some good balsamic vinegar (it becomes very sweet) for dipping strawberries in.

    Antipasto

    Fusilli and Asparagus salad with fresh basil and lemon vinaigrette.

    Fresh Green Bean salad with bacon bits and gorgonzola with a fresh basil and lemon vinaigrette.

    Smoked Salmon and crackers

    Garlic Toast

    Stuffed Baked Potatoes

    Baked Beans or Cowboy Beans

    Barbecued pork chops and roasted corn on the cob. And, this:

    Cornbread Salad is very good and, if you put it in a glass bowl, it looks so pretty!

    1 packet Hidden Valley Ranch Dressing OR 1 bottle ranch dressing

    8 oz. sour cream

    1 box Jiffy Corn Muffin Mix, prepared per box instructions

    1 can pinto beans, partially mashed

    2 cans whole kernel sweet corn, drained and rinsed

    1 can sliced black olives

    1 medium onions, chopped

    1 bell pepper, sliced into very narrow strips

    3 green onions, sliced (Slice tops and reserve for garnish.)

    2 medium tomatoes, chopped

    1 cup shredded Cheddar cheese

    3 or 4 slices crisp cooked bacon, crumbled OR packaged real bacon bits

    Mix ranch dressing and sour cream. Refrigerate.

    Cut or break the cornbread into 1 – 2-inch pieces and cover the bottom of a glass bowl or pan with it. Pour and smooth out enough dressing over the cornbread to make a smooth covering. Drain all the canned vegetables and sprinkle a layer of each over the dressing. Add onions, tomatoes, and peppers followed by a layer of cheese and bacon. Add more cornbread and repeat layers until all ingredients are used.

    Top with dressing mixture and garnish with onion tops, olives, and tomato.

    Refrigerate until chilled and enjoy!

    For potlucks I like to take a big bowl of fruit-----just buy berries and melons and bananas and apples and grapes---things that wash easily, without seeds, and are readily availabe in the summer. Start with a big can or two of mandarin oranges. Do not drain the juice. The acid in the juice will keep the bananas and apples from turning brown. Cut up everything to bite sized pieces and keep on stirring to get the mandarin orange juice on the fruit. This is also really, really good spooned over vanilla bean ice cream.

    Barbeque ribs and or barbeque chicken. Pasta salad and potato salad. Corn on the cob. And a nice fruit tray, with a fruit dip. For a great dip....mix one package of philly cream cheese with 1 jar of marshmellow fluff. Yum!!!!

    Brat's and Italian sausage sandwiches would also be good. Johnsonville makes the best!

    I love Tri-Tip on the grill. I First trim the fat that is thicker than a quarter inch, then I rub lawrys season salts and McCormicks grill mates mesquite seasoning into the outside. Grill on lowest setting with the lid closed for 15 to 20 min per side. (time varies depending on weight and grill) This is one of my wife and my favorite recipes.
