My public profile is presently limited to latest job (for privacy reasons). If I invite someone to be my connection, what will they be able to see when they click on my name? Will they see my entire profile with job history details (which is what I want so they can know about me) or just the limited public profile?

Click profile pic and check the box labeled "standard security" and check it to friends of friends
