What can my employer ask when I am not in working hours?
What can they ask me to do/be like when I am not working. i.e. representing their brand? I work for a company that services clubs, concert venues etc and they have asked us to represent the brand when we are on nights out (not work related)

They are mostly just asking you not to behave in a way that will make you look bad, because their reputation may be affected by your behaviour inside any club or venue that they service or hope to service. This clause is in your contract so that your employer can discipline you if you upset one of their clients, even when you are not at work.
Your employer needs clients to trust them, if their clients see their employees behaving badly then that affects how your company is perceived.

some employers expect involvement in outside activities and some don't. I guess legally you are within your rights to fail to go along with this, but it can be frowned on by the employer.
What do they mean for you to do exactly?

I think your problem will be in the fact you either misrepresent their brand, or inappropriately misrepresent their brand on your nights out.
